Doña Cristina Jalomo, from Soledad near San Luis Potosí México, went to grind corn for tortillas and got back red masa because the mill had just ground cascabel chiles. Not one to waste, she used the red masa to make tortillas, which her family loved.

Doña Cristina basically invented the inside-out quesadilla! She mixed thick salsa with crumbled cotija cheese and stuffed it into tortillas, baking them on the griddle. It's like flavoring your enchiladas from the inside out!

Seeing the potential, Doña Cristina started selling her red tortillas as enchiladas in the town plaza on Sundays and holidays. Her enchiladas became so famous that they were registered in 1965 and are now a culinary icon of San Luis Potosí. Today, many families continue the local tradition by cooking the enchiladas to keep her delicious legacy alive.
